It was born of lives lived in the town of Bay Shore, NY, where four generations of our family have enjoyed the gift and presence of the Great South Bay. In fact we often cite it as our reason for living here.

Our love for the Great South Bay coupled with the Town of Islip’s program to promote aquaculture, and of course our Irish heritage, is what created Shamrock Oyster Farm.

Shamrock Oyster Farm

Our farm is located 3.5 miles south of Bay Shore, just north of Sexton Island and east of Sand Island.

Our oysters are genuine Blue Points as they are Eastern Oysters and grown in the Great South Bay which are the two prerequisites for a true Blue Point. They are farmed using multiple types of off bottom culture equipment.

We seeded our farm in the summer of 2019 and had our first harvest late in the summer of 2020.

The 2020 growing season was a great one, comparable to a great vintage if you will. In my short lived experience oystering, that is how I would best describe it. The waters of the Great South Bay were clean and warm with lots of healthy algae and nutrients.
